Sometimes, you explore an ingredient you never thought it would be so versatile. A while ago I found out that apple sauce is a perfect cake maker: it’s sweet, smooth and with the right ingredients, it makes one perfect cake.
The best thing of it all, is that apple sauce is a healthier option to add to a cake than sugar, especially when you use one without any added sugar. All the other ingredients are healthy too, and it fills you up much more than a normal cake. You could even eat it for breakfast! Do I need to say more?
What you need:
- 250 gr. applesauce
- 100 gr. oatmeal
- 50 gr. buckwheat flower (or any other kind of flower)
- 3 eggs
- 50 gr. dried fruit (I used cranberries)
- 50 gr. nuts (walnuts, almonds, pecans, pistachios, etc.)
- 2 teaspoons of cinnamon
- Pinch of salt
- Olive oil or coconut oil
How to bake:
Preheat the oven to 180 degrees. After stirring the eggs, put the buckwheat flower and the oatmeal into the bowl. Afterwards, add the apple sauce, cinnamon, a pinch of salt and a dash of olive or coconut oil. Mix it together with the nuts and the dried fruit and pour it into a greased cake mold.
Bake it for 45 minutes, and you’re done!
